
No Tahini Hummus

Over at FamilyFood, Citymama, had a great idea for a Greek 7 layer dip. I am going to try it. To make it you need hummus. I thought I would post my recipe for super simple hummus. Sometimes Tahini, a usual ingredient in hummus, is hard to fine, so I make it without and it tastes great to me.
GreenSunflower's Quick Hummus
- 1 16 oz can chickpeas/garbanzo beans, drained and rinsed
- 1 and 1/2 lemons juiced (It must be fresh juice)
- 1/2 tsp salt
- 1 clove garlic, minced
- 4-6 tb olive oil
- small handful flat leave parsley, chopped
In bowl of food processor, add chickpeas, lemon juice, salt and garlic. Begin to puree. Stream in olive oil until hummus is of the desired consistency. Add parsley and pulse 3-4 times. Serve with pita, pita chips, veggies, or just eat with a spoon!
