This is my quickie, I don't have time to cook meal. Babe loves it and doesn't even realize how quick it is too cook. I have made it wheat free here by not adding soy sauce, and using wheat free tamari instead. If you are going to add wheat, please still use tamari, it is such a better taste. I also use a store bought spice packet (That might have trace wheat). I don't use the directions on the back.
CHICKEN FRIED RICE
- 6 boneless skinless chicken thighs, cut into bite sized pieces
- 8 big green onions/scallions
- 1 cup frozen peas
- 8 oz pasteurized egg product (or use 4 beaten eggs)
- 1 spice packet for fried rice
- 3 tb wheat free tamari
- 2 tb canola oil (peanut would work too)
- 2 cups jasmine rice
- 3 cups water
In rice cooker combine rice and water. Cook. After rice has been cooking about 10 min, heat a large wok or deep dish skillet over medium high heat. Add oil. Once oil is heated, add chicken and soy sauce. Saute until chicken is cooked, opaque, and firm. Add onions and peas, let come back to a simmer. Add rice and spice packet. Stir, letting sit on the bottom of the pan long enough to brown the rice. In another frying pan add a tiny bit of butter and scramble eggs. Once eggs are cooked add to rice, stir. Top with Sriracha or Chinese hot oil.
