The Season Is Almost Here!

So we all know that I am nuts for Christmas! But at least now we are getting closer to the time and I don't look so crazy?  I got this wrapping paper organizer

and have my two Costco rolls of wrapping paper on it.  Then I wrapped the Christmas presents I bought in July:)  You wouldn't believe how easy it is to wrap when you have an organizer.

Pumpkin Cake

So Babe bought me this ( or rather like it, they don't have the big one on their website) and I made this

It is supposed to be a pumpkin, thought I know it doesn't look the best.  I also ate a huge piece of it (It is wheat free, but tastes oh so real) and now feel sick. 

Omelet with Carmalized Onions and Chili Pepper

I made this for Babe's breakfast in bed this morning.  He loved it.  Thought I would  share.

2tsp butter

2tsp olive oil

½ of a large onion

½ tsp red pepper flakes

3 large eggs

1tb milk

¼ cup grated tasty cheese of your choice

salt and pepper to taste

Heat a skillet to medium heat.  Melt butter and oil together.  Slice the onion thinly and add to the oil and butter.  Season with salt and pepper to taste.  Add red pepper flakes.  Sauté for 10-15 min until onions are brown and smell sweet.  Spread onions evenly over bottom of pan.  Whisk egg with milk. Pour over onions. Let cook until almost set, do not disturb. Spread cheese over one half of omelet and fold omelet in half with spatula.  Turn off heat, cover pan and let sit for 2-3 mins.  Serve.

The Big Day

Tomorrow is the first day of my senior year and for the first time since I started nursing school, I am not flipped out.  I figure if I have gotten straight A's up until this point, I can most certainly pass what is reputed to be the easier year of nursing school. And seriously what scared me so much the past four semesters was the idea that I might not be able to pass.  Which is so funny since I made Dean's list all four. 

I have to get my binder ready but other than that I am set.  I finished up the pediatric dosing/IV math module and I get most of it.  They will teach it in school, so I should be set after that.  I am carpooling with one of my best friends four days a week.  I cant tell you how much easier it is to be awake by the time you get to your clinical site at 6:30am, when you have someone to jabber with on the way there.  Especially a good friend.

In Babe news, I got him to the doctor to talk about his insomnia.  She says she will not give meds because he has a fucked rhythm and doesn't seem to have generalized anxiety or insomnia.  See, Babe stays up until 3-4am everyday, so he can communicate with people in other times zones, like the Asia.  He used to do this and wake up at 12pm, but now he wakes up at 8am.  She says he needs to readjust his work schedule.  I don't know how that is going to happen when he has international clients, but thanks doc. 

Babe has also been spending a lot more time with me.  He has dedicated the hours of 5-9pm as time to spend with me and he really mostly sticks to it.  It has made me feel a ton better in the loneliness department.

And on the Christmas Crazy tip.  I cant wait for egg nog lattes and I bought nice quality wrapping paper at Costco yesterday.  Like two huge rolls, one if reversible, so it is like a 2in1. I also smelled a peppermint lip gloss and was high as a kite. I mean I smelled it and my heart rate increased, I felt a little flighty and then a cascade of Christmas thoughts and dreams flowed over me.  If you want peppermint bark this year, leave a comment and your email and I will happily send you some.

I Am Certifiably Nuts- Updated!

In so many ways, here is another:

I am already looking forward to Thanksgiving and Christmas:

  1. I have made a small Christmas List and posted it on my blog.
  2. Made a list of the people I need to buy Christmas presents for and started to figure out what to get them.
  3. Made an inquiry at the ribbon store as to when they will be getting hunter green and dark red ribbon.  I need those to wrap my presents.
  4. Put on my to do list to ask Little One where I can buy shitloads of wrapping paper that is 1)good quality 2)not so fucking expensive.
  5. Talked to two people about how I cant wait for eggnog lattes to start selling at Peet's and Starfucks.
  6. Bought a cornucopia with fake whatever in it, along with a runner to display on my dining room table during the season.
  7. I have already been looking at various places for a great dining room centerpiece for Christmas.
  8. I have stared downloading Christmas music for my ipod.  I even have a Christmas playlist.
  9. Started to think about where to put my Christmas tree this year, which I will most certainly acquire the day after Thanksgiving.
  10. Bought a cutsie keepsake ornaments from Hallmark.

Lock me up people.  I am holiday crazy and it is August.

Update: I just made a list of who gets peppermint bark this year.  I plan to make it over Thanksgiving break and then more batches as needed.... someone stop me.  Oh and if you want peppermint bark let me know.  Super Nursing Buddy, Soon-to-be Nursing Buddy, and Internet Nursing Buddy you are already on the list for the delicious white chocolate morsel.  Don't tell me about dieting.  Who diets at Christmas?

Donna Reed Incarnate

Not really, she was way better than I am but in just today I:

  1. Made homemade ice cream.  My 4th batch this summer.
  2. Bought ribbon so I could wrap presents to my heart's delight.
  3. Cooked beets so they would be ready in the next couple days, in case Babe gets hungry on a whim.
  4. Cleaned my whole house.
  5. Wrapped thank you gifts for the wedding (I know I am behind) and put pretty little bows on them.  Wrapping_paper_001

Crazy Cooking Lady

Yep...that would be me.  I spent 4.5 solid, and I do  mean SOLID hours cooking meals.  Like 14 of them to freeze, so Babe, who only really likes to eat at home, can have home cooked meals for dinner.  This is what my freezer looks like now.* Cooking_lots_002_1

*I have an extra fridge in the kitchen, my freezer is not that empty nor clean usually.

Ranch Burgers

Ranch Burgers

  • 1lb ground meat
  • 1/2 packet ranch dip mix (Hidden Valley)
  • 1tb worchestshire sauce
  • 1/2 tsp freshly ground pepper
  • 1 egg

Mix all ingredients in a bowl and form into patties.  BBQ or George Foreman.  Serve with fries.

Peppermint Bark

Peppermint_bark_010 I have made three batches of Peppermint Bark to send around the world with love.  I have had a few  people ask for the recipe, so here it is with pictures.

10 bags white chocolate chips
3-5 tsp peppermint extract (I use the Trader Joe's one)
A little less than 2 9oz boxes mini candy canes broken up into 1cm piecesPeppermint_bark_003 Peppermint_bark_001
Line two industrial size cookie sheets with cooking spray and then parchment over it.Peppermint_bark_005  Melt the chocolate in a  double boiler until smooth.Peppermint_bark_002   Add peppermint extract and titrate up until you find the right flavor. Peppermint_bark_004  Put in a couple of handfuls of the candy canes.Peppermint_bark_006   Spread the mixture into the cookie sheets (you may have to use an extra plate or other flat surface as there may be a little left over) until you find the right thickness (about 1/2-3/4 cm for me).Peppermint_bark_007  Sprinkle a couple more handfuls of candy cane on top. If your trays can fit into the freezer put them in there. Peppermint_bark_008 Peppermint_bark_009  If they cant, refrig it first then cut the tray in half (it will be hard) and put into freezer for 30 min.  Pull each big piece one by one from the freezer and place on cutting board.  Use tip of butcher knife (one you do not care about) in from the edge of the piece and lift piece up to break into bite size (or two bite or more) pieces.Peppermint_bark_011   Package and send with love.
